Teriyaki Chicken Meatballs

1 lb ground chicken
1/2 cup panko breadcrumbs
1 egg
Seasonings: salt, pepper, garlic powder, onion powder
1/2 shallot, minced
3 garlic cloves, minced
1/2 cup kinders teriyaki marinade
Olive oil
1/2 lb broccoli
For topping: teriyaki sauce
Instruções
In a large bowl, combine the ground chicken, panko crumbs, shallot, garlic, egg, seasonings, and teriyaki marinade. Add the teriyaki marinade in 1/4 cup at a time to make it easier. Mix around well. If consistency is good after 1/4 cup, don’t add any more teriyaki marinade or else it can get too runny to form the meatballs. Use a small scooper or your hands to make 1-2" meatballs. Place them onto a plate or pan.
Heat a large pan on medium/high heat with olive oil. Once hot, add in the meatballs and cook for 5-6 minutes. Once browned on one side, flip them all. Once they reach 165F internally, stir them around the pan to coat all sides and then turn the heat off.
Make your broccoli in a smaller pan. Heat on medium/high heat and add in olive oil and broccoli. Season with salt and pepper. Add in teriyaki marinade and stir.
On a plate, add the chicken meatballs and broccoli. White rice optional. Pour teriyaki sauce over top. Enjoy!
