Onion Chutney

Ingredientes

1 cups chopped tomatoes

1 cup chopped onions

2-3 cloves garlic (optional, for extra flavor)

1 tablespoon oil (vegetable or mustard oil works well)

1 teaspoon mustard seeds

1-2 dried red chilies (adjust to taste)

1 teaspoon ginger (grated, optional)

1 tablespoon vinegar or lemon juice

1-2 tablespoons sugar (adjust to taste)

1/2 teaspoon ground cumin

1/2 teaspoon chili powder (optional)

Salt to taste

Instruções

Heat Oil

Heat oil in a pan over medium heat. Add mustard seeds and let them crackle.

Add dried red chilies for a smoky flavor.

Sauté Onions and Garlic

Add chopped onions and cook until soft and golden. If using garlic and ginger, add them now and sauté for a minute.

Cook Tomatoes

Add chopped tomatoes and cook until they soften and break down. Stir occasionally to prevent sticking.

Add Spices

Stir in ground cumin, chili powder (if using), sugar, and salt. Adjust sweetness and spice levels to your preference.

Simmer

Add a splash of water if needed and let the chutney simmer for 5-7 minutes until thickened.

Finish with Vinegar

Stir in vinegar or lemon juice for a tangy kick.

Cool and Serve

Let the chutney cool before serving. It pairs well with bread, rice, dosas, or grilled meats.

originally the recipe has 2:1 Tomatoes vs Onions. I changed it to 1:1.
