Ingredientes

  1. 2lbs chicken breasts cut in half lengthwise

  2. Peanut oil

Marinade

  1. 2 cups buttermilk

  2. 1 tbsp kosher salt

  3. 1 tbsp pepper

  4. 1 tbsp garlic powder

  5. 1 tbsp smoked paprika

  6. 1 cup dill pickle juice (maybe)

Flour

  1. 2.5 cups all purpose flour

  2. 1/2 cups cornstarch

  3. 2 tsp baking powder

  4. 2 tbsp dried thyme

  5. 1 tbsp garlic powder

  6. 1 tbsp onion powder

  7. 2 tbsp celery powder

  8. 1 tbsp smoked paprika

  9. 1 tbsp kosher salt

  10. 3 tsp mustard powder

Instruções

  1. Preheat the oil to 350°

  2. Dry off chicken first

  3. In a medium bowl, add all ingredients for the marinade minus the chicken. Whisk together until homogenous. In a separate large bowl, add all ingredients for flour dredge and whisk until combined.

  4. Add your chicken to your marinade, making sure that it’s fully submerged; let it sit for at least 5 minutes at room temperature or overnight in the fridge, covered with plastic wrap

  5. Remove chicken from marinade and toss in your seasoned dredge; press the dredge aggressively to the chicken to coat it thoroughly. Once completely coated, place on a baking sheet and repeat with the rest.

  6. Place chicken into grease

  7. Let cook for 5-7 minutes depending on how big chicken Is

  8. Top with sea salt as soon as chicken comes out of grease
