Cheddar Mash

5#s Yukon gold potatoes, peeled, quartered

1/3 cup kosher salt

1 cup panko

8 oz white cheddar cheese, cubed

1 cup whole milk

1 stick unsalted butter

kosher salt, to taste

Step 1️⃣Preheat the oven to 350°. Add the potatoes to a large pot covered with cold water. Bring to a boil, once boiling, add in the salt and cook until tender, about 15 minutes. Drain and place back into hot pot.

Step 2️⃣In a small sauce pot, heat the milk and the butter just until the butter is melted. Remove from the heat.

Step 3️⃣Rice the potatoes into the same large pot that they cooked in. Stir in the warm milk and butter, stir until just fluffy and combined. Season with salt. Add to an oven safe dish.

Step 4️⃣To a food processor, add the panko and cheddar. Pulse until coarse crumbs form. Top the potatoes with the breadcrumbs. Stop at this stage you are prepping a couple days before! Bake at 350° for 25-30 minutes until warmed through and a golden top. Remove and serve warm.
