3 large eggplants
2 cups breadcrumbs (more if needed)
Parmingiano cheese
Pecorino cheese
Provolone cheese
Tablespoon mint
Tablespoon parsley
Salt and pepper
2 eggs
Sauce
Olive oil
2 garlic cloves
1-2 shallots
2 bottles tomato puree
Salt and pepper to taste
Cut eggplants into cubes and fry.
Sprinkle some salt while frying eggplant.
Once cooked in a bowl use a fork to break down the eggplant as much as you can.
Instruções
Add the breadcrumbs, cheeses, mint, parsley, salt pepper and eggs in a bowl and mix until combined.
Roll into balls and then place into sauce one by one gently.
When you eggplant in the sauce , lower the flame to simmer, and let it cook for 20minutes. Do not stir. They will break. Just shake the pan alittle.
