Spinach and Artichoke Orzo

Ingredientes

1 tbsp olive oil

1/2 onion, chopped

5 garlic cloves, minced

5-10oz spinach

12 oz cauliflower rice (or half head if you make it on your own)

1–2 cans white beans, drained and rinsed

2 cans artichoke hearts, drained and chopped

1 1/2 cups orzo

3 cups chicken broth

1 1/2 tsp kosher salt

1/2 tsp lemon zest

1 tbsp lemon juice

1 cup shredded mozzarella

1/2 cup grated Parmesan

Instruções

Heat a lidded skillet with oil over medium heat. Add the onion and cook for 5 minutes, then add the garlic and cook for 3 more. Stir in the spinach and cauliflower rice and cook until the spinach wilts, about 2 minutes. Add the remaining ingredients except the cheeses and bring to a boil. Gently press the mixture so the orzo is mostly submerged, cover, and simmer for 10–12 minutes, stirring once, until the orzo is tender. Remove from heat and fold in the cheeses.
