Tandoori Chicken Burgers

These were BANGIN and so easy to make 🤌🏻Marinated tandoori chicken breast fillet, layered with garlic mint yoghurt, lettuce, a dollop of mango chutney and some poppadoms for added crunch.

Ingredients (serves 2):
2 x 125g chicken breast flattened
1 tbsp tandoori seasoning
1 tsp chopped garlic
1 tbsp lemon juice
30g plain yoghurt
Garlic Mint Yoghurt sauce:
70g fat free greek yoghurt
1 tsp fresh chopped mint
Pinch of salt
¼ tsp chopped garlic
1 tsp lemon juice
To assemble:
2 brioche buns
2 handfuls of shredded lettuce
20g mango chutney
A few mini poppadoms (or 1 large one broken)

Add the chicken to a bowl before seasoning with the tandoori seasoning. Add in the chopped garlic, along with the lemon juice and yoghurt. Mix to combine and marinate for 30 minutes.
To cook, add the chicken to a hot pan. Sear on both sides for 3-4 minutes until cooked through. Alternatively, you can air fry for 10-13 minutes at 190 degrees celsius.
Whilst the chicken cooks, make the yoghurt with the ingredients listed.
Next, toast the brioche buns until lightly golden.
Spread the bottom bun with the garlic mint yoghurt sauce before topping with the shredded lettuce.
Top with the cooked chicken breast fillet followed by the poppadoms, mango chutney and remaining bun.
