One Pot Lemon Shrimp Orzo

Składniki

1 cup orzo

15-18 shrimp

1 cup chopped asparagus, cut into 1" pieces

2 garlic cloves, minced

1 small yellow onion, diced

2 cups vegetable broth

1/3 cup grated parmesan cheese

1 tbsp white cooking wine

1 tbsp extra virgin olive oil

1/2 tsp sea salt

1/4 tsp black pepper

1/2 tsp lemon zest

1 lemon, juiced

1/2 tsp garlic powder

Wskazówki

In a pan heat up olive oil.

Coat shrimp with sea salt, black pepper and garlic powder to saute.

Add shrimp to cook until pink. Remove from the stove for now.

Pour in white cooking wine and scrap off any excess left on the dish. Add your minced garlic and onion to saute.

Add in asparagus to saute.

Add vegetable broth and orzo and bring to a boil.

Turn heat to a simmer and put lid on. Let orzo cook for 7-9 minutes until it soaks up the broth. Continue to stir throughout so the orzo so doesn't stick.

Pour in grated parmesan cheese.

Add cooked shrimp back in and stir.

Remove from the heat and add lemon zest and lemon. Mix to combine.
