Buttermilk Pancakes

1 cup (120 g) flour (+8 g for humidity)

1 tablespoon sugar

1/2 teaspoon baking soda

1/2 teaspoon baking powder

Pinch of salt, optional

1 cup buttermilk, room temperature

1 egg, room temperature

1-2 tablespoons oil, room temperature

Wskazówki

Whisk dry ingredients together.

Whisk wet ingredients together.

Pour the wet mixture into the dry and fold together just until mixed. Do not over mix.

Cook on griddle at 300-325 degrees.

The recipe works better with room temperature ingredients but not absolutely necessary. It also works better with regular buttermilk not made with vinegar.

If making buttermilk, make sure the milk is warm and other liquids are warm for the vinegar to activate. Use 1 tablespoon vinegar and milk to make 1 cup and let sit 5 minutes or more.

If adding berries, add them to the dry ingredients before adding the liquids.
