Fasolakia (greek Green Beans with Potatoes

1/3 cup extra virgin olive oil
1 large onion, chopped
2 garlic cloves, minced
1 lb green beans (fresh or frozen)
3 potatoes, peeled and cut into cubes
1 cup crushed tomatoes
1 tbsp tomato paste
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
Salt and pepper to taste

In a pot, heat the olive oil and sauté the onions and garlic until soft.
Add the potatoes and tomato paste. Stir and cook for 1–2 minutes.
Add the green beans, crushed tomatoes, salt, pepper, parsley, and mint.
Add enough hot water to cover about half of the beans (add more if needed).
Reduce heat to medium-low and simmer covered for 30–40 minutes, or until the beans and potatoes are soft.
Finish with a little extra olive oil, parsley, and mint.
