Oven Baked - Sheet Pan Kebabs with Haloumi

1kg lean beef mince (or lamb)
1 ½ teaspoons cumin (or ground coriander)
1 ½ teaspoons paprika
1 teaspoons oregano
1 teaspoon salt
1 teaspoon pepper
Chilli flakes (optional)
1/4 cup tomato paste
1 onion
1 bunch parsley
2 cloves garlic
Extra virgin olive oil
To serve:

Grilled Haloumi
Salads - Lettuce, Tomato, Onion
Garlic yoghurt or store bought tzatziki
For garlic yoghurt mix 1 cup Greek yoghurt with 1/2 teaspoon finely grated/minced garlic and a generous squeeze of lemon)

Preheat oven to 220c.
Add mince to a large bowl with spices listed and tomato paste.
In a food processor, very finely chop onion, parsley and garlic until it’s formed a paste.
Add this onion mix to the mince.
Mix really well by hand until all the flavours have combined. About 2 minutes.
Take a large baking tray and drizzle with extra virgin olive oil.
Flatten the mince out evenly approx 2cm thick. Leave some space around the edges as the meat mix will release juices when cooking.
Cut the mixture straight through touching the bottom of the tray into 8-10 even strips about 3cm wide.
Take a knife or spatula and make dents all over the surface of the kebabs. This will help with browning.
Brush with extra virgin olive oil.#
Bake for 15 minutes. Some liquid will be released - you can drain this away or it will continue evaporating under the griller.
Place under the grill for a further 2-3 minutes to develop a nice brown crust. Watch closely as it can burn.
Serve on a pita bread with garlic yogurt, cooked Haloumi and salads of your choice. #Kebabs #sheetpandinner
