Chicken Tinga

Chicken

600g (21 oz) chicken breast

1 Tbsp neutral oil

¾ tsp salt

½ tsp black pepper

½ tsp garlic powder

½ tsp onion powder

Aromatics

⅔ white onion, diced

1 tsp minced garlic

1 tsp tomato paste

1 tsp oil

1⅓ tsp dried oregano

⅓ tsp smoked paprika

½ tsp cumin seeds, lightly crushed

Tinga Sauce (to blend)

265g (9 oz) fire roasted tomatoes

1 roma tomato, diced (optional but recommended)

½ chipotle pepper (or 1 full pepper if you want very mild heat)

1 tsp adobo sauce

1 Tbsp apple cider vinegar

120–130 ml (½ cup) chicken bone broth (add more during cooking if needed)

¼ tsp sugar or honey (add more later if needed)

¼ tsp kosher salt to start

1 bay leaf

Squeeze of fresh lime at the end

1. Sear the Chicken

Pat chicken dry and season with salt, pepper, garlic powder, onion powder.

Heat 1 Tbsp oil in a large pan over medium-high.

Sear chicken 2–3 minutes per side (don’t cook through).

Remove and set aside.

2. Cook the Aromatics

Add 1 tsp oil to the same pan.

Sauté onion 4–5 minutes.

Add garlic; cook 30 seconds.

Add tomato paste; cook 1 minute.

Add oregano, smoked paprika, crushed cumin seeds; cook 30 seconds.

3. Blend the Sauce (Your Mild–Medium Heat Version)

Transfer aromatics to a blender and add:

Fire roasted tomatoes

Roma tomato

½ chipotle pepper

1 tsp adobo sauce

Apple cider vinegar

Chicken broth

Sugar/honey

¼ tsp salt to start - add more if needed

Blend until completely smooth.

Pour sauce back into the pan and add the bay leaf.

4. Simmer

Add seared chicken to the sauce.

Simmer partially covered for 15–18 minutes.

Remove chicken, shred into large chunks.

Return chicken to sauce and simmer 3–5 more minutes.

Taste and adjust:

Add broth if too thick

Add honey if too acidic/spicy

Add salt if flat

Add a tiny bit more chipotle only if needed

5. Finish With Lime

Squeeze fresh lime over the finished tinga.

It brightens and balances the entire dish.

First attempt used 2 chipotles in adobo with seeds + 1 teaspoon sauce - too hot, had to add honey and broth —> modified spice level in recipe

Served with rice but would be great in a taco!
