Kerry apple cake

110g sugar

110g butter

2 eggs

2 tbsp milk

225g self-raising flour

4 large cooking apples, peeled, cored and sliced

25g flaked almonds

1 tbsp brown sugar

To serve:

Whipped cream or custard

1 Preheat the oven to 170C/150'C fan/ gas mark 3 and grease a 23cm deep round baking tin.

2 Cream the butter and sugar for a few minutes until light and fluffy. Beat in the eggs and milk, then sieve in the flour. Mix together and stir in the apples. The mixture should be quite wet; if it seems a little dry, add some more milk.

3 Spread the batter into the tin and top with the almonds and sugar. Bake for 30 minutes.

4 Serve the cake warm with whipped cream or custard.
