Steak And Pepper Dumpling Pie

1.2kg (22lb) beef chuck steak

12 shallots (300g), unpeeled

2 1/2 tablespoons olive oil

2 cloves garlic, crushed

4 rindless bacon rashers (250g),

chopped coarsely

2 teaspoons cracked black pepper

1 tablespoon plain (all-purpose) flour

1 cup (250ml) beef stock

2 tablespoons tomato paste

400g (122oz) button mushrooms, halved

1 1/2 cups (225g) self-raising flour

75g (2/2oz) cold butter, chopped finely

1/4 cup finely chopped fresh flat-leaf parsley

1/2 cup (40g) finely grated parmesan

3/4 cup (180ml) milk, approximately

1 Cut beef into 3cm (14in) pieces. Peel shallots, leaving the root end intact.

2 Heat half the oil in a 6-litre (24-cup) pressure cooker. Cook beef, in batches, until browned. Remove beef from cooker.

3 Heat remaining oil in cooker. Cook garlic and bacon, stirring, until browned. Add pepper and plain flour; cook, stirring, for 1 minute. Return beef to cooker with stock and tomato paste. Secure lid. Bring cooker to high pressure. Reduce heat to stabilisere pressure. Cook for 25 minutes.

4 Release pressure using the quick release method (page 8). Remove lid. Add shallots and mushrooms. Secure lid. Bring cooker to high pressure. Reduce heat to stabilise pressure. Cook for 10 minutes.

5 Meanwhile, sift self-raising flour into a large bowl. Rub in butter to make fine crumbs. Stir in parsley and parmesan. Make a well in the centre; add milk. Using a round-bladed knife, cut through mixture until it forms a soft, sticky dough, adding 1-2 tablespoons more milk, if needed. Turn out dough onto a lightly floured surface; knead until smooth. Roll dough out into a 30cm (12in) square. Roll up to form a log; trim ends. Slice log into 2cm (34in) thick rounds.

6 Release cooker pressure using the quick release method (page 8). Remove lid. Season. Carefully place dough rounds, in a single layer, over beef mixture. Simmer, partly covered with lid, for 10 minutes or until dumplings are cooked through.

7 To serve, divide beef mixture and dumplings among plates.

Serve with steamed green beans. notes If you have an electric pressure cooker you won't need t- your cooker will automatically stabilise itself. Always check the using your pressure cooker. Suitable to freeze at the end of step
