Gerstley Chicken Soup

Whole chicken in parts
3 carrots
3 celery sticks
Bay leaf
Parsley bunch
Sweet potato
Large onion
Water
2 chicken bouillon cubes

Pull skin off chicken but keep bones on (can keep skin on but then you need to spoon the fat off).
Chop carrots, celery, and onion into chunks.
Most humans like chopped parsley, so add as you wish, but since I don’t, I leave the whole bunch in there for flavor and take it out before serving.
Peel sweet potato and add it whole.
Add cold water + 2 cubes to cover everything in the pot.
Bring to a boil, then simmer
Cook until the chicken is cooked, then remove it.
Shred the chicken, return it to the pot.
Optional: add the bones back to the pot - adds flavor but some get small and break (remove before serving).
Remove the sweet potato and blend it with the broth, return it to the pot.
Cook for 4ish hours.
Remove the herbs + peppercorns if added.
Salt and pepper to taste - also can squeeze lemon juice at the end
