Healthy Tuna Melt Harissa Wrap Parcels

Did you know around 50% of people in the UK eat a sandwich every day. Upgrade your lunch with my super easy but delicious melt wrap parcels. A great option to pack in lots of nutrition and a filling 31g of protein.
You will need to serve 2 (store leftover mix for 3+ days)
392kcal & 31g protein
120g drained weight tuna (get all the water out to avoid soggy parcels!)
1 large spring onion
1/2 red pepper diced
1 stick celery
1 tsp rose harissa
1 tbsp thick yoghurt
Pinch salt and black pepper
2/3 sundried tomatoes
50g grated mature Cheddar
2 wholemeal wraps
Handful of spinach or rocket
Finely dice the spring onion, celery, red pepper and sundried tomatoes. Mix with tuna, yoghurt, harissa, salt and pepper.
Wskazówki
Place into the centre of a wrap, and top with 25g grated cheddar, a little spinach or rocket. Fold inwards then fold the sides in to form a parcel. Brush or spray with olive oil if you like.
Air fry at 190c fan for 8 minutes or pan fry on either side in a dry frying pan over low/ medium heat until golden and cheese oozy.
