Veggie Packed Cottage Cheese Bread

My viral cottage cheese bread is back and it’s better than ever! This time I’ve packed it with veggies that are so subtle, you won’t even notice they’re there🥕🥒 perfect for children too!!

Full of fibre, protein, and healthy fats, this veggie-loaded bread is perfect for breakfast, lunch, or a quick snack on the go!😋

YOU’LL NEED

200g grated carrot

200g grated courgette (squeezed to take out liquids)

200g oats

300g cottage cheese

2 tbsp flaxseeds

70g mixed seeds

2 eggs

1/2 tbsp baking powder

1/2-1 tsp salt (to taste)

Wskazówki

Preheat your oven to 180°C.

Mix all the ingredients in one bowl until well combined, use your hands if needed

Form the dough into an oval loaf shape with wet hands on some baking parchment, pressing  it firmly together. keep the loaf the same height throughout and not too thick otherwise this will  affect cooking times.

Bake at 180°C for 60 minutes (or until cooked through)
