Blueberry Cottage Cheese Pancake Bites – Air Fryer or Oven,

1 cup cottage cheese

2 large eggs

½ ripe banana, mashed

½ cup oat flour (or almond flour for low-carb)

1 tbsp honey or maple syrup (optional)

1 tsp vanilla extract

1 tsp baking powder

Pinch of salt

½ cup fresh or frozen blueberries

Step-by-Step:

Preheat oven to 350°F (175°C) or prepare air fryer. Lightly grease a mini muffin tin or silicone molds.

In a bowl, mash the banana and whisk together with cottage cheese, eggs, vanilla, and honey/maple syrup.

Add flour, baking powder, and salt; mix until smooth.

Gently fold in the blueberries.

Spoon batter into molds and bake 15–18 minutes (or air fry 8–10 minutes) until golden and set.

Cool slightly and serve warm or chilled.
