Crispy Caesar Chicken

Ingredients:
Carrots (6 oz / 12 oz)
Potatoes (12 oz / 24 oz)
Garlic (1 clove / 2 cloves)
Parmesan Cheese (1 TBSP / 2 TBSP)
Panko Breadcrumbs (¼ cup / ½ cup)
Caesar Dressing (1.5 oz / 3 oz)
Sour Cream (1 TBSP / 2 TBSP)
Chicken Cutlets (10 oz / 20 oz)

1. Prep ingredients
Adjust rack to top position and preheat oven to 425°F.
Wash and dry produce.
Peel and cut carrots diagonally into ½-inch thick pieces.
Dice potatoes into ½-inch pieces.
Peel garlic.
2. Bread the chicken
In a small bowl, combine cheese, half the panko, and a drizzle of olive oil. Season with salt and pepper.
Pat chicken dry with paper towels and season with salt and pepper.
Evenly spread 1 tsp Caesar dressing on top of each cutlet.
Mound with panko mixture and press to adhere.
3. Roast the carrots and chicken
Toss carrots with olive oil, salt, and pepper on one side of a baking sheet.
Place chicken, crust side up, on the other side.
Roast on top rack for 15–20 minutes, until carrots are browned and tender, and chicken is cooked through.
4. Cook potatoes and garlic
While the above roasts, place potatoes and garlic in a medium pot with enough salted water to cover by 2 inches.
Bring to a boil and cook until tender (10–12 minutes).
Reserve 1 cup potato cooking liquid, then drain and return to pot. Keep covered off heat.
5. Mash potatoes
Add sour cream and 3 TBSP butter to potatoes and garlic.
Mash until smooth, adding splashes of reserved cooking liquid as needed (about ¼ cup used).
6. Serve
Divide carrots, chicken, and mashed potatoes between plates.
Serve with remaining Caesar dressing on the side for dipping.
