Cowboy Tater Tot Casserole with Beef and Cheese

1 lb ground beef
1 tablespoon olive oil
1 small onion, diced
1 can (15 oz) baked beans or chili beans, drained
1/2 cup barbecue sauce
1 teaspoon chili powder
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
Salt and pepper to taste
1/4 cup chopped green onions or parsley for garnish (optional)

Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a skillet over medium heat, cook olive oil and diced onion for 2 to 3 minutes.
Add ground beef, cook for 6 to 7 minutes until browned. Drain excess fat.
Stir in beans, barbecue sauce, chili powder, salt, and pepper. Simmer for 2 to 3 minutes.
Pour the mixture into the prepared baking dish.
Sprinkle with 1 cup of shredded cheese.
Arrange tater tots evenly on top.
Bake for 30 to 35 minutes until tots are golden.
Top with remaining cheese and bake for another 5 minutes.
Garnish with green onions if desired.
