Dark chocolate brownies

180g unsalted butter
110g semi-sweet chocolate
2 tsps instant coffee powder
100g granulated sugar
100g soft brown sugar
2 eggs
1 tsp vanilla
60g cocoa powder
55g all purpose flour
1/2 tsp salt
1 cup of chocolate chunks

Melt the butter, semi sweet chocolate, and coffee powder over medium heat.
Beat the sugars, eggs (room temp), and vanilla on high speed with a machine until light in color.Add in the melted chocolate mixture and mix on low speed.
Fold in the cocoa powder, flour, and salt. Then fold in the chopped chocolate.
Place the batter in a 8×8incg pan lined with parchment paper and bake for 22-25 min at 375F.
