Spinach, Mushroom & Cottage Cheese Frittata

A simple, hearty dish you can enjoy for breakfast, lunch, or dinner.
Low-carb, high in protein, and easy to make in one pan.
Ingredients (Serves 2)
4 large eggs
¼ cup milk (regular or unsweetened almond)
½ cup cottage cheese
1 cup baby spinach, chopped
½ cup mushrooms, sliced
¼ cup shredded mozzarella
2 Tbsp grated Parmesan
1 Tbsp olive oil
¼ tsp onion powder
Salt and pepper
Fresh parsley or chives for garnish
How to Make It

Preheat oven to 375°F. Grease a small round baking dish or oven-safe skillet.
Heat olive oil in a pan. Sauté mushrooms for 3 minutes, then add spinach until just wilted. Season with salt, pepper, and onion powder.
In a bowl, whisk eggs, milk, and cottage cheese. Stir in mozzarella and Parmesan.
Pour the egg mixture over the spinach and mushrooms.
Bake for 20–25 minutes, until puffed, golden, and set in the center.
Let cool a few minutes, garnish with parsley or chives, then slice and serve.
Tips
Sprinkle everything bagel seasoning on top before baking for extra flavor.
