Massaman Beef Mince

1 onion
3 cloves garlic
1 tablespoon extra virgin olive oil
500g lean beef mince
3 tablespoons massaman curry paste I used @ayamaustralia
200ml coconut milk
1/2 cup chicken/beef stock
80g chopped baby spinach
To serve:
Steamed broccolini or green beans
Cooked rice
Chopped roasted peanuts
Chili and coriander optional
NOTES - if you love the traditional potato in a massaman curry, chop 1 potato into small 1cm cubes. Add this when the stock and coconut milk is added and let it gently simmer away and cook in the sauce. You may need to add some extra stock over time.

Finely dice onion and finely chop garlic.
Heat a large frypan on medium-high. I’m using a large @lecreuset non stick ceramic coated pan.
Add a drizzle of extra virgin olive oil.
Add onion and cook stirring for a few minutes until softened. Then add garlic for 1 minute.
Add beef mince and break up with a spoon while it’s cooking to prevent lumps forming - about 5 minutes until the liquid has cooked out.
Add massaman curry paste and cook stirring to coat the mince for a minute.
Add coconut milk and stock and reduce heat to a simmer for 5 minutes it should thicken slightly.
Stir through chopped baby spinach in the final minute.
Serve with cooked rice, steam greens and chopped peanuts. Fresh chilli and coriander are nice extras.
