Rice Cooker Garlic Chicken Rice

Ingredients: serves 4
CHICKEN AND MARINATE
500g chicken boneless chicken thigh, diced
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp Oyster sauce
2 tsp sesame oil
2 tsp shaoxing cooking wine
1 tsp white pepper
1 tbsp brown sugar
1 tbsp minced ginger
2 clove garlic, minced
OTHER
3 Chinese sausage, sliced
2 cups Rice
3 cups water
2 tsp white pepper
4 tbsp dark soy sauce
2 tbsp chicken stock powder
1½ cup chopped spring onions
fried shallots to garnish
1) Combine all your marinate ingredients and let your chicken sit for 30 minutes.
2) Soak your Chinese sausage in hot water for 10 minutes, then peel off the wax layer. Slice it up.
3) Prepare your spring onions and wash your rice.
4) In your rice cooker pot, combine your rice, water, marinated chicken, white pepper, dark soy sauce and let it cook.
5) Once ready, add your spring onions and mix through.
6) Serve hot and garnish with fried shallots.
