General Tso-Style Sauce for Air- Fried Tofu

1 block extra-firm tofu
2 tbsp soy sauce (full sodium is fine here)
1 tsp hoisin sauce
1 tsp rice vinegar
1-2 tsp honey (adjust to taste)
1 clove garlic, minced
1 tsp fresh ginger, grated (or ½ tsp if you want it mild)
1-2 tsp sriracha or garlic chili crunch (depending on your spice preference)
2-3 tbsp water (helps balance saltiness)
1 tsp cornstarch + 2 tsp water (slurry to thicken)
1 tsp sesame oil (for finishing)

1. Start by breaking tofu into chunks with your hands. Toss with 1 tbsp of cornstarch (shake in Tupperware for even distribution). Cook in an air fryer at 400 until golden.
2. Prep slurry: In a small bowl, stir together cornstarch and water. Set aside.
3. Cook aromatics: In a small pan over medium heat, add a little neutral oil. Sauté garlic and ginger for about 30 seconds until fragrant.
4. Build sauce: Add soy sauce, hoisin, rice vinegar, sugar/honey, sriracha or chili crunch, and water. Stir well and bring to a gentle simmer.
5. Thicken: Stir in the cornstarch slurry. Cook for 1-2 minutes, stirring, until the sauce is glossy and coats the back of a spoon.
6. Finish: Remove from heat and stir in sesame oil.
7. Toss tofu: Add your hot, air-fried tofu cubes straight into the pan and toss until coated.
