Sautee the onions, carrots & celery in olive boil
Once they start turning gold add your garlic
Sautee until the garlic is no longer raw
Add mince & let it brown
Add enough red wine to cover the mince & vegetables
Allow to reduce. Then add passata or italian tomato sauce.
Add fresh herbs, rind & let simmer for a while.
Take it out when ready
