Mashed Potato Cinnamon Rolls

1 cup mashed potatoes
7 cups unbleached bread flour
2 room temp eggs
1 cup raw sugar
2 cups warm milk
1/2 cup warm water 105*
4 1/2 tsp active dry yeast
1/2 cup softened butter
2 tsp salt
Heavy cream
Mix your potatoes, sugar, salt, eggs, milk, butter and half your flour in a stand mixer with dough hook. Bloom your yeast with the 1/2 cup warm water and add into your dough mixture. Add 1/2 cup flour at a time until you've gotten 7 cups incorporated in your dough. If it's still too sticky you can add more flour.
Filling
1 cup brown sugar 6 tbsp softened butter 1/2 cup sugar and 2 tsp cinnamon
Frosting
6 oz cream cheese
2 tbsp butter softened
5 tbsp milk
4 cups powdered sugar and 1 1/2 tsp vanilla.
Roll out rolls as normal and add 2tsp of heavy cream on top of each roll, bake at 350 for 20-25 mins. Watch your rolls after the 20 minute mark as I tend to overcook mine and only like that slight browning on top.
