Grown Up Tomato Soup

Grown-Up Tomato Soup (from crushed tomatoes)

Ingredients

1 tbsp butter

1 tbsp olive oil

1 small onion, diced

2–3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 cup broth (veg or chicken)

½ cup cream (or milk if you’re being restrained)

Salt + black pepper

Optional but encouraged:

Pinch of red pepper flakes

Dried basil or thyme

Tiny pinch of sugar or drizzle of honey if tomatoes are sharp

Wskazówki

Pot on medium heat. Butter + olive oil in.

Add onion. Cook 5–7 minutes until soft and translucent. No browning. We’re soothing, not searing.

Add garlic. Stir 30 seconds. If it smells amazing, you did it right.

Dump in crushed tomatoes + broth. Stir.

Season with salt, pepper, and any herbs you’re using.

Simmer 15–20 minutes, partially covered. Walk away. Stir once if you feel guilty.

Lower heat. Stir in cream.

Taste. Adjust salt. Add that tiny pinch of sugar only if needed.

Optional upgrades (pick ONE, not all)

Blend it smooth with an immersion blender if you want silky vibes

Add a knob of butter at the end for richness

Splash of white wine early with the garlic if you’re feeling fancy
