Easy Cannellini Bean Patties

Makes about 5 patties

1 tin cannellini beans, drained

Small handful spinach, finely chopped

1 tbsp parsley, chopped

1 small garlic clove, crushed

½ tsp cumin

½ tsp smoked paprika

Pinch chilli flakes

Zest of ½ lemon

Salt and pepper

1 egg

2–3 tbsp flour

For coating

2 tbsp flour

Olive oil for frying

Wskazówki

Drain the beans and pat them dry with a paper towel.

Mash with a fork in a bowl.

Add the spinach, parsley, garlic, spices, lemon zest, salt and pepper.

Mix in the egg and 2–3 tablespoons of flour to bring everything together.

Pop the mixture in the fridge for about 5 minutes to help it firm up.

Shape into patties, lightly dust in flour and fry in olive oil for about 4 minutes on each side until golden.

Tip

Great served in wraps, salads or with yoghurt or hummus.

They also freeze well for up to 2 months.
