Pancake
1 cup water
3 eggs
3/4 cup plain flour
1 1/2 tsp salt
4 cups finely shredded cabbage
2 tsp grated ginger
1 cup prawn tails, peeled, deveined, roughly chopped
Neutral oil, to cook
100g thick-cut bacon, cut into 2.5cm pieces
Okonomiyaki Sauce
1/4 cup ketchup
1/4 cup Worcestershire sauce
2 tbsp oyster sauce
1 1/2 tbsp caster sugar
To Garnish
Okonomiyaki sauce (above)
Kewpie mayonnaise
Aonori, to garnish
Bonito flakes, to garnish
Spring onion, sliced, to garnish
For the okonomiyaki sauce, mix all ingredients until the sugar dissolves.

To make the pancake combine water, eggs, flour and salt to make a batter. Mix through cabbage, ginger, and prawn tails. Heat a large pan over medium heat. Add 2 - 3 tablespoons of oil, and when it shimmers, ladle about 1/2 of the batter into the pan, shaping into a large, thick pancake. Layer several pieces of bacon on top. Cook over medium-low until the pancake is browned and set on one side. This will take around 7 or 8 minutes. Flip, and cook on the other side. Serve, second side up, with okonomiyaki sauce, a drizzle of mayo, the Aomori, bonito flakes and spring onion.
