Cheesy Potato Casserole

Ingredients
3 lb potatoes (Yukon Gold, red, or russet), cut into cubes or wedges
3 Tbsp butter
1/2 ish cup sour cream
½ cup milk (adjust for creaminess)
Sprinkle of Tony’s Creole Seasoning
1 small onion, finely diced (optional, but recommended)
Chives (optional)
Salt and pepper, to taste

Preheat Oven:
350°F. Grease a 9×13-inch baking dish.
Prep Potatoes:
Peel if desired (skins are optional).
Cut into wedges or 1-inch cubes.
Parboil in salted water for 8–10 minutes, until just tender but still firm. Drain well.
Make Creamy Base:
In a medium saucepan, melt butter over low heat.
Add diced onion / chives and cook 2–3 minutes until softened
Stir in sour cream and milk, heat gently until smooth.
Season with Tony’s and pepper. Taste and adjust seasoning.
Combine:
Gently fold parboiled potatoes into the creamy mixture.
Pour into prepared casserole dish.
Optional Topping:
Sprinkle shredded cheddar and/or breadcrumbs on top for a golden crust.
Bake:
Cover with foil and bake 25–30 minutes.
Remove foil and bake an additional 10–15 minutes until top is lightly browned and bubbling.
Serve:
Let rest 5 minutes before serving.

Cheese Variations: Cheddar, Monterey Jack, or a little Parmesan.
Herbs: Fresh chives, or thyme add freshness.
Spice Boost: Add garlic powder or paprika if desired.
Make Ahead: Assemble the casserole and refrigerate overnight; bake the next day, adding 5–10 minutes to cooking time.
