Creamy Tomato Chicken & Bacon Gnocchi

To make 3 portions you will need:
2 chicken breast diced
150g diced smoked bacon
500g gnocchi
200ml single cream
1/2 red onion diced
1tsp smoked paprika
1tsp italian herbs
2 cloves garlic minced
1tbsp sundried tomato paste
Pinch pepper
1/2 @knorruk chicken stock pot
Handful fresh basil
To a pan add a drizzle of olive oil, chicken, paprika & italian herbs. Fry off for around 7 mins on a medium heat.
Remove the chicken from pan and set to one side.

Add the bacon and onion then fry off for 5 mins.
Place the gnocchi on to cook as per the packet instructions and drain off when done.
Add the garlic, tomato paste, stock pot & 100ml water. Stir through and leave to cook for 5 mins.
Add in the cream, pepper, fresh basil and chicken and bring to a simmer.
Add in the gnocchi, stir through & serve immediately topped with some more fresh basil. If you want it to look ‘insta’ I held back from cooked chicken and bacon to place on top too.
