Boursin Chicken and Bacon Pasta

This is absolutely delicious and such an easy pasta to make perfect for a weekend date night at home.

Ingredients (serves 2):
200g chicken breast diced
Tsp garlic granules
Tsp Italian herb seasoning
Salt
Pepper
Low calorie cooking spray
40g lean diced bacon
Small white onion finely sliced
Tsp garlic
120g dry pasta
60g Boursin cheese
200ml chicken stock
40g reduced fat cheddar
Fresh parsley
Season the chicken with the garlic granules, herb seasoning, salt and pepper to taste leave to one side.
Meanwhile, spray a frying pan with low calorie cooking spray and add the bacon cooking until done. Remove from the pan and set to one side.

Add the diced white onion and garlic fry until slightly softened before adding the chicken.
Bring the pasta to boil in salted water
Once the chicken is cooked remove from the pan, add the Boursin cheese and stock mix together over high heat.
When the sauce has slightly reduced, stir through the cheese combine the pasta with the sauce.
Serve with the chicken and bacon on top. I tend to use a bit of pasta water in the pan to make up a little additional sauce to pour over the top before garnishing with parsley.
