Egg Masala Curry (Anda Curry - Dhaba Style)

6-7 eggs

1 large red onion

4 roma tomatoes

5 cloves garlic

1 tbsp ginger

5 green chillies

2 cups water

4 tbsp neutral oil

1 stick cinnamon

1 bay leaf

2 green cardamom pods

1 black cardamom pods

2 tbsp kashmiri red chilli powder (or any other red chilli powder)

2 tsp cumin

2 tsp coriander powder

2 tbsp garam masala

salt to taste (~2 tsp)

1 tsp black pepper

Wskazówki

Start by medium boiling the eggs in boiling water for 7 minutes (this will leave the yolk jammy).

While thats happening, finely chop 1 large red onion, 4 roma tomatoes and 5 green chillies.

Once the eggs are boiled add them into cold water to stop the cooking process, then peel and set aside.

In a pan heat up 1 tbsp neutral oil and add in the eggs and fry for 2-3 minutes then set it aside.

(Optionally you can add 1 tsp red chilli powder, 1 tsp turmeric and a pinch of salt for extra flavor. The spices get directly added into the pan with the eggs while frying, toss them around until fully coated.)

In the same pan add 2 tbsp of neutral oil and heat up before adding in the whole spices listed above.

Let the spices get aromatic (~1 minute) then go in with the onions and cook until soft (8-10 minutes) on medium low heat.

Once the onions are soft, add in chopped tomatoes, chopped green chillies and minced garlic/ginger.

Let that cook for another 4-5 minutes on medium heat.

Add in the spices listed above, 2 cups of water and bring to a simmer, let that go for 15-20 minutes, this will allow the spices to build and become really flavorful.

Add in a handful of chopped cilantro and the boiled eggs.
