Homemade Döner

Ingredients:

1 kg mince (chicken, beef, lamb, or a mix)

2 onions, blended into a smooth paste

50 ml olive oil (less for a lighter version)

4 heaped tbsp yoghurt

2–3 tbsp Donner Kebab Spice Mix

1 tbsp salt (optional, or adjust to taste)

Lemon juice (for finishing)

Method:

Preheat oven to 200°C.

Blend the onions until smooth, then mix with the mince.

Add olive oil, yoghurt, Donner Kebab Spice Mix, and salt if using.

Mix very thoroughly until the mixture becomes smooth, sticky, and fully combined.

Spread the meat very thinly (just a few mm) onto square sheets of parchment.

Roll each sheet up tightly and place the rolls on a baking tray.

Bake for 20 minutes.

Remove, drain off excess liquid, then bake for another 15 minutes or until the paper turns dark brown.

Unroll, drizzle with lemon juice, and optionally bake for a final 5–10 minutes to crisp the edges.

Slice thinly and serve with salad and warm pita or pide style bread.
