Bourbon Braised Short Ribs
3 lbs boneless short ribs
2 carrots, scrubbed and sliced in half inch pieces
2 celery stalks, diced
1 head of garlic, peeled
1 white onion, thinly sliced
1/2 cup olive oil
1/4 cup lemon juice
1/2 cup bourbon
1/3 cup maple syrup
2 cups beef stock
1 tsp garlic powder
1 tsp onion powder
3 tbsp Worcestershire
2 tbsp tomato paste
2 bay leaves
1 handful fresh thyme
Lots of salt and cracked pepper

Turn oven on to 350 degrees. Turn on Dutch oven on to medium high heat, season short ribs generously with salt and pepper and sear the short ribs in batches. Once finished, turn heat to medium low, add the tomato paste, onion and garlic powder and bourbon, lemon juice, maple syrup and Worcestershire. Whisk to remove any bits from the pan. Add carrots, garlic, celery and onion. Nestle the short ribs back into the pot and add enough beef broth to cover the meat. Cover and bake for 6 hours. Turn off oven and allow to cook in the warm until you’re ready to eat. Enjoy!
