1⁄2 cup (75g) caster (superfine) sugar
4 green onions (scallions), white part chopped finely, green tops sliced thinly
40g (1/2oz) fresh ginger, sliced thinly
4 cloves garlic, crushed
2 star anise
1 cinnamon stick
1⁄4 cup (60ml) soy sauce
1/4 cup (60ml) chinese cooking wine (shao hsing)
2 large oranges (600g)
1/4 cup (60ml) rice wine vinegar
1 bunch radishes (500g)
500g (11b) baby cucumbers
1 teaspoon sesame oil
2 teaspoons chilli oil
toasted sesame seeds, to serve
