Mom's Veal Parmigiana

4 eggs
1/2 cup milk
Salt and pepper, to taste
3 cups Italian-style bread crumbs
8 veal cutlets
Oil
1 onion, chopped
Butter
1 pound ground beef
1 jar (32 oz) spaghetti sauce
1 can (6 oz) tomato paste
1/2 tsp garlic powder
1/2 tsp oregano
1 tsp parsley
1 bay leaf
Mozzarella cheese, shredded

Put bread crumbs in shallow dish. In another bowl, mix together eggs, milk, salt, and pepper. Dip veal cutlets in egg-milk mixture and then in bread crumbs, coating well. Brown cutlets in hot oil on medium heat. Set aside.
In butter, sauté onions thoroughly to make sauce; add ground beef and brown thoroughly. Add spaghetti sauce, tomato paste, garlic powder, oregano, and parsley. Simmer on low heat for about 2 hours.
To assemble, arrange cutlets in casserole dish. Pour sauce over cutlets and cover generously with mozzarella cheese. Bake at 350°F for 45 minutes to 1 hour.
