1 cup orzo pasta
1 bell pepper (any color), diced
1 yellow onion, chopped
3 cloves garlic, minced
14 oz canned diced tomatoes
2 cups fresh spinach
2 cups low-sodium chicken broth
1 tsp dried basil
1 tsp dried oregano

Reduce heat to low, cover, and simmer until orzo is tender and most liquid is absorbed (10-12 minutes). Stir occasionally.
