Sundried Tomato and Lemon Pasta

1 tbsp extra virgin olive oil
3 large thinly sliced shallots
2 tsp italian seasoning
2 tsp dried basil
1 tsp red pepper flakes
1 lemon (zest and juice)
2.8 oz sundried tomato paste
1 cup heavy cream
2 cups spinach
½ cup grated parmesan
1 lb pasta (rigatoni)
red pepper flakes for garnish
Wskazówki
1. Add oil to a large pan on medium to high heat
2. Add the sliced shallots and cook until translucent, about 3 minutes
3. Add seasonings, lemon zest & juice, and sundried tomato paste. Cook for 5 minutes
4. Add cream. Stir in spinach when it starts to simmer/bubble.
5. Add parmesan on low/no heat and season as needed
