Asian Chicken Stirfry With Noodles

Marinated chicken
2 chicken thighs or chicken breast, sliced
¼ tsp chicken powder or pinch of salt
¼ white pepper
1 tbsp GF soy sauce
1 tbsp sake or cooking wine
⅛ tsp bicarb soda
1 tbsp corn starch

Mix well and let marinate for 30 minutes or overnight.
Stir fry
200g rice noodles, soak in cold water for ~20 minutes while you prep veg (soaking time varies a little by brand) (I’m using @bluedragonuk here)
1-2 tbsp oil
1 carrot
1 brown onion
3-4 cloves garlic
2-3cm piece of ginger
Handful of broccolini
5-6 baby corn stalks
2 bulbs of bok choy (separate leaves from stem)
Handful of snap peas
¼ tsp chicken powder/salt
⅛ tsp white pepper
Sauce Mix
1 tbsp GF soy sauce (my favourite is @kikkomanuk )
½ tbsp sesame oil
1 tbsp GF oyster sauce
1 tbsp GF dark soy
