Blackened Chicken Alfredo 🔥
2 chicken breasts (thinly sliced or pounded for faster cooking)
2 tbsp blackening seasoning (or mix:
1 tsp paprika, 1 tsp garlic powder, ½ tsp onion powder, ½ tsp cayenne, ½ tsp thyme, ½ tsp oregano, salt & pepper)
2 tbsp olive oil or butter
8 oz fettuccine or pasta of choice
1 cup heavy cream
¾ cup grated Parmesan cheese
½ cup chicken broth (or pasta water)
2 cloves garlic, minced
Optional: parsley & extra Parmesan for garnish
Quick Steps
1. Cook pasta in salted boiling water until al dente (8-10 min). Drain, reserving ½ cup pasta water.
2. Season chicken generously with blackening seasoning.
3. Sear chicken: Heat olive oil in a large skillet over medium-high. Cook chicken 3-4 min per side until blackened outside and cooked through. Remove & rest.
4. Make sauce: In the same pan, lower heat to medium. Add garlic; cook 30 sec. Pour in chicken broth & cream; stir and simmer 2-3 min.
5. Add Parmesan gradually, stirring until smooth.
6. Combine pasta with sauce. Toss until coated, adding reserved pasta water if needed for desired consistency.
7. Slice chicken and serve over pasta. Garnish with parsley & extra Parmesan.
Tips for faster cooking:
Pound chicken thin for quicker, even cooking.
