Asian Style Pork Tacos

1 drizzle of oil
600g free farmed pork mince
100g hoisin sauce
1 twin pack baby bok choy, thinly sliced
100g sliced roasted capsicum
450g slaw
2 Tbsp rice wine vinegar
To Serve
I pack tortillas (12 pack)
1 pack chopped peanuts
4 Tbsp Japanese mayo
Wskazówki
Cook pork
Heat oil in a frypan on medium-high heat. Cook pork for 6-7 minutes,
breaking up pork as it cooks, until cooked through. Add hoisin sauce to pan, toss to coat and season to taste with salt.
Prep veggies
Thinly slice bok choy. Toss in a salad bowl with remaining slaw ingredients. Season to taste with salt.
Heat tortillas
Place stack of tortillas on a plate and microwave for about 1 minute to warm.
Serve
Fill tortillas with pork, slaw, peanuts and Japanese mayo.
