Sauteed Vegetables (Easy Veggie Skillet)

3 Tbsp olive oil
1 medium red bell pepper, chopped
2 medium carrots, peeled and thinly sliced (1 cup)
1/2 medium red onion, chopped (1 cup)
2 1/2 cups broccoli florets, cut into bite-size pieces
1 medium yellow squash, thick portion halved, all sliced
1 1/2 tsp minced garlic
1 1/2 tsp fresh thyme leaves
salt and freshly ground black pepper, to taste
2 Tbsp chopped fresh parsley
1 1/2 tsp fresh lemon juice
1/4 cup grated Parmesan cheese (optional), for serving

Step 1
Heat olive oil in a 12-inch skillet over medium-high heat until shimmering.
Step 2
Add bell pepper, carrots, onion, and broccoli. Sauté for 4 minutes, tossing occasionally so the vegetables can brown slightly.
Step 3
Add the squash and sauté for 3 minutes.
Step 4
Toss in the garlic and thyme, season with salt and pepper to taste, and sauté for 2 minutes more, or until vegetables are just tender.
Step 5
Sprinkle with parsley and lemon juice; toss to combine. Serve with Parmesan if desired.
