Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry produce. Cut potatoes into ½-inch-thick wedges. Toss potatoes on a baking sheet with a drizzle of oil, salt, and pepper. Roast on top rack until browned and tender, 20-25 minutes. Cut sweet potatoes into ½-inch-thick wedges or cut broccoli into bite-size pieces. Swap in for potatoes; roast 20-25 minutes for sweet potatoes or 15-20 minutes for broccoli.

Meanwhile, halve, peel and thinly slice onion. Heat a drizzle of oil in a large pan over medium-high heat. Add onion and season with salt and pepper. Cook, stirring, until lightly browned and softened, 8-10 minutes. (If onion begins to brown too quickly, stir in a splash of water.)

Place 2 TBSP butter (4 TBSP for 4 servings) in a second small microwave-safe bowl; microwave until melted, 30-60 seconds. Halve buns and brush cut sides with melted butter. Toast buttered buns.

While potatoes roast, pat chicken dry with paper towels and rub all over with a drizzle of oil. Season all over with salt, pepper, and BBQ Seasoning. Transfer to a second baking sheet and roast on middle rack until chicken is cooked through, 15-20 minutes.

Add ¼ cup water and 1 tsp sugar (⅓ cup water and 2 tsp sugar for 4 servings) to pan with onion. Cook, stirring, until onion is caramelized and jammy, 2-3 minutes more. Transfer to a small bowl. Add BBQ sauce to bowl; stir to combine.

Fill buns with BBQ caramelized onion and chicken. Divide chicken sandwiches and potato wedges between plates.
