Salmon Croque Monsieur (Rachel)

Składniki

Ingredients for 3 persons:

- Unsweetened Brioche/ buttermilk Bread

- Smoked Salmon (8 oz or 220 g)( buy wild salmon - there is no such a thing as sustainable farm salmon)

- 1 medium Organic Lemon ( zest and pulp will be used)

- Heavy Cream (4oz.)

- Creme Fraiche ( you can substitute with sour cream) (4oz.)

- Wild Fennel tender green spears you can forage on California and Irish coastal hikes 🙂 (you can substitute with half a bunch of dill)

- Chives (half a bunch)

- Old fashion (whole grain) mustard (1 tsp)

- Salt & pepper

- One and a Half stick (6 oz or 170 g) of room temp salted butter

- Wash the lemon and zest it

- Segment the pulp with a sharp knife, remove all seeds

- Tip #2 : Keep the center for juice that you can use for a salad dressing

- Slice the herbs very thin

- Mix the cream, creme fraiche, zest, segments, herbs, mustard, salt and pepper to taste in a bowl. (If using sour cream use less segments) and set aside

- Slice the bread in ¾ inches slices (2 cm). Cut 12 slices

- On each slice spread the cream and herbs mixture

- On half of the slices put a thin layer of sliced smoked salmon, being careful to cover the entire surface of the slice, and to have a consistent layer of each ingredient

- Assemble the sandwiches and butter generously each exterior side

- In a warm pan (cast iron is best) on very low, toast the croque monsieurs on each side.

Serve with arugula, BON APPETIT! <3
