Chicken pesto panini

4 crusty baguettes

Olive oil

4 tbsp fresh basil pesto

4 handfuls of baby spinach leaves

16 sun-dried tomatoes in oil, drained and chopped

350g roast chicken, sliced

100g Gruyere, grated

Salt and black pepper

Wskazówki

1 Preheat a sandwich maker or countertop grill.

2 Slice the baguettes in half and pull out some of the bread from each half to create a slight depression. Brush the outsides of the bread ligh with oil.

3 Spread the insides of the baguettes with pesto Top with spinach, sun-dried tomatoes, an grated cheese. Season with salt and black peppe then press the baguettes closed.

4 Place on the sandwich maker or countertop grill and cook for 4-5 minutes or until golden and the cheese has melted. Slice across the middle diagonally and serve with the soup.
