Dough:

2 sticks (1 cup) butter at room temp.

½ c. powdered sugar

yolk from 1 large egg

1 tsp. vanilla extract

Water

2-1/2 c. flour

Filling and Decoration:

About ½ C raspberry jam

½ c powdered sugar

2 tsp. lemon juíce

2 tsp. heavy cream or milk

Instructies

Heat oven to 350 degrees.

In a large bowl, beat butter and powdered sugar until blended. Beat in egg yolk and vanilla until pale and fluffy. Beat in flour just until blended. Wrap in plastic wrap and refrigerate 1 hour, or up to 4 days.

Divide dough into 4 pieces. Roll each piece into a rope about 12 inches long and 3/4 inch thick. Put ropes 2 inches apart on ungreased cookie sheets. With the side of your little finger, press a groove down center of each.

Bake 10 minutes, or until cookies feel firm to the touch.

Spoon jam in to grooves. Return to oven for 5-10 minutes, until cookies are light golden brown.

To decorate: In a small bowl, mix confectioners sugar, lemon juice and crean until smooth. Drizzle over hot cookies.

Cut cookies while warm at a 45 degree angle into 1-inch lengths. Allow to cool on cookie sheets on a wire rack until set.
