Mexican Rice

Ingrediënten

2 c long grain rice

1 roma tomato

1/4 onion

5-6 garlic cloves

1/2 tbsp tomato paste

Instructies

Add your oil to a hot skillet over medium heat. Add in your rice. Fry for 4-5 mins until a nice golden brown color. Make sure to stir often.

While the rice fries, add 1 c water, tomato, garlic, 1 tsp salt, and onion to your blender. Blend until a smooth sauce.

Once your rice is ready add in tomato paste, cook for a min, while mixing vigorously to make sure it’s mixed into the rice.

Add in your sauce & mix well.

Add 2 1/2 c of water to your blender, swirl it around, and then pour into your pan as well. Give it a good stir. Adjust salt to taste.

DONT TOUCH IT FROM THIS POINT ON!

Bring to a simmer, cover, and reduce heat to low. Set a timer for 15 mins. It’s gonna take 15-20 mins, but I always check around 15.

Once all the rice has evaporated & the rice is nice & soft it’s done!

Give it a good fluff, serve with your fav dishes, and enjoy babe!
