Green Goddess Cabbage

Ingrediënten

For Salad:

1/2 head of Green cabbage, chopped

1 English cucumber or 3 Persian cucumbers, chopped

1 cup shelled edamame

4 stalks green onion, sliced thin

2 tbsp fresh chives, chopped fine (optional)

1 can chickpeas, drained

For Dressing:

2 garlic cloves

1/2 small white onion

1 ripe avocado

3 tablespoons fresh lemon juice

1 tsp salt

4 tbsp tahini

1/4 cup water

Additional Salt and pepper to taste

Instructies

Preheat oven to 400 F. Place drained chickpeas in a sheet tray, drizzle with oil and season with salt and pepper. Bake for 20-25 mins or until crispy. Set aside and let cool.

Place the chopped cabbage, cucumbers, crispy chickpeas, chives (optional) and green onions in a large bowl.

Add all the dressing ingredients to a blender or food processor. Blend until creamy.

Pour the dressing over the cabbage mix and toss to combine.

Serve as is or as a dip and Devour!
